BRUTØ is a small-format restaurant that furthers Kelly Whitaker’s commitment to highlighting heritage grains as a foundation of the menu. Every dish—like fresh baked breads, daily flown in oysters and other fish, seasonal Colorado grown farmers market raw vegetable plates, and a full roster of the team’s wood-fired proteins and other favorites that are crafted using house-milled grains and attention to local suppliers year-round.
BRUTØ will also service the entire hospitality offering to Free Market from weekly community aperitivo hour, workshops and classes, hosted dinners and events in collaboration with the 10 brands and merchants that make up Free Market as a way to combine hospitality and retail in a new way.
At BØH, the companion concept to BRUTØ in FREE MARKET, is featuring a pop-up onigiri counter that is now open Wed-Sun 9-4pm alongside coffee from Devoción, a fourth-wave coffee company from Colombia and natural wines. BØH will also have an extensive bar,with taps for beer, cider, and sake. A small prep kitchen hosts rotating pop-ups and special events, and acts as a test kitchen for the Id Est team.
